If you are looking for heritage wheat or flour go to your local health food store or search the internet for suppliers. It is a niche market. Large scale farmers are not interested in selling 10 pounds of flour so there are various handlers, all taking their cut and putting on the markup.

All of the old varieties and 'ancestral grains' are unregistered and therefore unregulated so there's no guarantee what you get is what you think you are getting.
